Overnight Oats- 3 Delicious Ways


I've never made overnight oats before. I see them all the time on Pineterst but just have done nothing with that particular piece of Pinterest knowledge. When I eat breakfast it is normally half a bagel with cream cheese or a piece of toast with egg whites. It needs to be quick, contain carbs and not be too filling. My morning routine consists of feeding/getting kids ready and rushing out the door to the gym before kid number two is transitioning back into sleep mode before I can get a work out in. I'm not a breakfast persona to begin with, so its easy for me to fall into a rut. I decided to try these since I could pack them full of nutrients such as flax seed, chia seeds, whole oats, Greek yogurt and fresh fruit. And more importantly, I could prepare them ahead of time for a grab n go breakfast in the morning.

They all started with the same base... Bob Red Mill's 5 Grain Rolled Cereal*, chia seeds, flax seeds and low fat coconut milk.

I then put honey Greek yogurt in one flavor, passion fruit Greek yogurt in another and raspberry chocolate yogurt (for the hubs) in the last flavor. I added different variations of fruit/toppings in each. I will break this all down bellow.

* You must used rolled oats of something of a similar variety. Steel cut oats will not soften over night. Also do not use instant oatmeal.

Star Fruit, Persimmon and Passion Fruit Overnight Oats:

1/2 cup Bob Red Mills 5 Grain Rolled Cereal

1/2 cup coconut milk (you could use regular, almond or soy)

1/2 cup Passion Fruit Greek yogurt

1 tsp flax seed

1 tsp chia seeds

1 tsp honey

1 tsp vanilla

1/2 of a star fruit, diced

1/2 of a persimmon, diced

Layer the ingredients and shake. Let sit over night, store up to 3 days.

Blackberry Coconut Flake Overnight Oats:

1/2 cup Bob Red Mills 5 Grain Rolled Cereal

1/2 cup coconut milk (you could use regular, almond or soy)

1/2 cup Honey Greek yogurt

1 tsp flax seed

1 tsp chia seeds

1 tsp honey

1 tsp vanilla

1/2 cup of frozen (or fresh) blackberries

2 tbsp unsweetened coconut flakes/shreds

Layer the ingredients and shake. Let sit over night, store up to 3 days.

1/2 cup Bob Red Mills 5 Grain Rolled Cereal

1/2 cup coconut milk (you could use regular, almond or soy)

1/2 cup Raspberry/Chocolate Greek yogurt

1 tsp flax seed

1 tsp chia seeds

1 tsp honey

1 tsp vanilla

1 tsp coco powder

1/2 cup frozen (or fresh) raspberries

Layer the ingredients and shake. Let sit over night, store up to 3 days.
