Honey Lime Quinoa Fruit Salad


This was already one of my favorite fruit salads. It combines delicious fresh fruit with protein and carbohydrate rich quinoa and the sweet yet tart flavor of honey and lime. There is also a little bit of mint in there for some extra pizzazz. (Did I just say pizzazz?) Anyway, it is delicious. I am eating it as we speak for breakfast. Or you can just spoon a little into a bowl for a snack as well. A yummy and versatile dish, what else could you want? :) Eat that rainbow dang it!

Ingredients: 1 mango 1 1/2 cups blueberries 1 1/2 cups diced strawberries 3/4 cup dry quinoa 1/3 cup minced mint leaves 2-3 limes 2 tbsp honey

2 tbsp chia seeds

Instructions: 1. Cook 3/4 cup quinoa in a pot with 3/4 cups of water. Bring the water to a boil, add the quinoa and reduce heat. Stir the quinoa occasionally, it will take about 10 minutes to cook. 2. In a lidded mixing bowl, juice 2 limes and add 2 tbsp of honey. Stir this mixture together until it is homogeneous. 3. Add the blueberries and cut up strawberries. 4. Peel and dice the mango, adding it to the bowl as well. 5. Chop up your mint into small pieces and add it to the bowl as well. 6. Once the quinoa has cooled go ahead and spoon it ands the chia seeds into the mixing bowl also. (I'm trying to reconfigure the wording here so not to sound wildly repetitive. LOL) 7. Stir and serve. Refrigerate and eat when you're looking for a tasty treat. Enjoy!
