Butternut Squash, Goat Cheese and Black Bean Quesadillas

Bow-Chicka-Wow-Wow. "I hate a unique and delicious quesadilla," said no one ever. Seriously. There is no part of my soul that doesn't love good Mexican food. And there is not part of my mouth or brain that doesn't think goat cheese should be in practically everything. So I decided to combine a few of my great food loves and this was the result. Creamy and tart goat cheese, sweet oven roasted butternut squash, nutty black beans, and just the right amount of heat. If I wasn't already in a long running committed relationship (aka 10+ years of marriage with two crazy dogs and two beautiful children... yeah, its for real), then I would consider marrying this quesadilla.

Truthfully, that might be a stretch. There are a lot of things I would most likely marry before a quesadilla. Yoga pants for one; followed by wine, nap time, sunrise hikes in Hawaii, shopping, bunch, great conversation with friends, sleeping in... and any combination of the above listed things. So in reality I guess I don't want to be eternally committed to a quesadilla. Emotional commitment to a non living things aside, this is one tasty guy. And it really is quite simple. Sure, the list of ingredients isn't wildly brief, but its not like its that long either. And then all you do is pile it on and sear it on both sides. And if you want to go the extra few steps (no need to go a mile) then you can make a charred poblano sour cream to go with it. AND, if you are feelings particularly crazy, I guess you could marry it. The legitimacy of this marriage may be called into question from a legal standpoint. But you're a rebel, aren't you. You go you little rebel you.

Okay friends... lets get into this baby. One of my favorite store bought tortillas is Tortilla Land. They are pressed tortilla dough tortillas that you just "cook" in your pan. Soooooo much better than anything else. Costco has them, so do some grocers. But if you don't have either, Amazon Prime has your back. (I need to go on a quick Amazon Prime tangent. For all my friends who live in Hawaii, like me... or Alaska, like I used to... Amazon Prime is crap. Sure, the shipping is free. But the 2-3 business days is at a minimum 7-10. And that is just what they advertise/are forthcoming about. I have had packages take 3+ weeks on many an occasion. But, I guess that is my cross to bear living in a tropical paradise. I don't know how I do it. Shipping is crap though.)

Ingredients/Instructions:

Tortillas (quantity varies upon the size of the tortilla)

1 can black beans

1 small butternut squash, cubed 1/4" - 1/2" (oven roasted till tender)

1 cup cilantro leaves

8 oz shredded mozzerella

8 oz goat cheese

2 small cans diced green chiles

1-2 tbsp Tajin (a salt, chili lime seasoning)

1 chicken breast, cooked and diced (if you must... and my husband insists he must)

And there you have it friends.

1. Sear on a greased skillet, griddle or pan until golden brown and everything has melted together in the most oooey goooey way possible. :)

Top with Charred Poblano Crema if desired. :)

And you do so desire!
