Grilled Sliders with Sweet Potato "Buns"


Okay. Be skeptical. Be my guest. I was! Someone that I know had posted a picture on instagram with her bacon burgers with sweet potato "buns". It looked legit so I googled it; fully expecting that it would be some sweet potato "bread" recipe. As it turns out it is quite literally just a seasoned, baked sweet potato. It was delicious! I was incredibly surprised at how sturdy the sweet potato was. It held its own. Plus, lets be honest, sweet potatoes taste better than bread. I'm not going to sell you under the guise that it is exactly like bread. But it is a great platform for the traditional makings of a burger. Makes 10-12 Sliders

Ingredients:

3 sweet potatoes (ones that have as wide of a diameter as possible) 1 lb organic grass fed beef 6 pieces of organic bacon 2 avocados 1 egg 3 garlic cloves 3 tbsp diced pickled jalapeños (read the jar label to make sure there aren't artificial ingredients) 1 tsp Worcestershire 1 tsp salt 1 tsp pepper 1 tsp onion powder 1 tbsp coconut oil little bit more salt and pepper for sprinkling

Instructions: 1. Clean and cut your sweet potatoes. You want them to be about 1/2- 3/4 inches thick. 2. Preheat your oven to 425 degrees. Distribute your sweet potatoes evenly on a lined baking sheet or silicone mat. 3. Melt your coconut oil and brush it on the sweet potato medallions. Lightly sprinkle with salt and pepper. Flip them and repeat this process. Bake for a total of 35 minutes, flipping half way through. 4. While your sweet potato "buns" are cooking, go ahead and prep your beef. In a mixing bowl combine the ground beef, egg, minced garlic cloves, Worcestershire, 1 tsp salt, 1 tsp pepper and 1 tsp onion powder. I mix these ingredients together by hand. I find it works best. Its a little creepy mushing an egg up by hand. But it is also effective. 5. Make your beef patties about the size of your sweet potato medallions. And use your thumb to make a little depression in the middle of the patty. (This keeps the beef patty from puffing up and becoming this giant ball that you can't get your mouth around.) 6. Go ahead and toss those little beef sliders on the grill. Cook them on a medium heat for about 4 minutes per side. 7. While your burgers are cooking just go ahead and cooking your bacon to your bacon eating preferences. Crispy? Fatty? Its your bur-ogative! 8. In a small mixing bowl mush up your avocado and add the jalapeños and a pinch of salt. Use this as your spread. 9. Assemble your sliders by spreading some of the avocado mixture on the top "bun", bottom "bun" or both. Add your beef and then your bacon. Enjoy!
