Honey Lime Salad Dressing


So I am making a delicious salad tonight and wanted to post the sweet and tangy dressing separately. There isn't much to say about it, except that its super yummy. It is a great go to salad dressing if you want something with multidimensional flavor. It would pear great with a simple salad, a southwest cob or anything else that you think honey, lime and cilantro would accompany well. I have added a little bit of a "paleo Sriracha". (The recipe isn't from me, it is from Nom Nom Paleo. And honestly, I like it more than the stuff you can buy at the store.)This is important if you're trying to "eat clean". Typical Sriracha has a ton of preservatives.(I'm currently not eating any refined sugars, dairy or gluten for 30 days.) If you don't care then go ahead and use the store bought Sriracha, the flavor will be the same. :)

Ingredients: 1/2 cup lime juice 1/2 cup olive oil 1/2 cup cilantro leaves, packed 1/4 cup honey 5 garlic cloves 1/2 tsp sea salt 1- 2 tbsp Paleo Sriracha

Instructions: 1. In a food processor, combine the lime juice, garlic cloves and honey. Puree for 30 seconds, or until there are no major chunks of garlic. 2. Add the olive oil, salt and the cilantro. Use the "chop" setting on your food processor and blend for another 15-20 seconds. 3. Empty the contents into a mason jar or another lidded container. Add the Sriracha 1 tbsp, at first, then more if you want it. Shake thoroughly (lid on, haha) before each sampling.

Add to your salad, use as a a marinade or whatever... Enjoy!
