Whipped Feta Dip (the 5 minute appetizer everyone will devour)

4th of July is tomorrow (or not if you're reading this post a different day) and you are surely hosting or going to some sort of party where everyone brings a potluck-esque item. Seventeen orders of pigs in a blanket are great and all, but why not try some easy peasy and wildly delicious dip. It is essentially a throw in your food processor and go kind of dip. And when you are looking for a last minute dish, there isn't much out there better than this. But don't let its simplicity fool you. This dip (or spread) packs so much flavor! I seriously got so many compliments it was insane. I had to smack my husband's hand away in order to have enough to bring to the party we were going to.

And you NEVER would have guessed that it was the result of me looking in my kitchen and seeing what I had laying around. If you have feta, garlic, sour cream, lemons and some herbs/spices then you are good to go. Even if you do not have these ingredients on hand, it is a quick trip to the store and you're on your way to a fabulous appetizer that will have all of your friends dying for the recipe.

But let us not end it there my friends! This whipped feta "dip" also doubles as a great spread. It can elevate sandwiches, breakfast toast, burgers and so much more. Sure, the "so much more" should probably limit itself to culinary endeavors, but get creative. God gave you a human brain. Use it. A girl can only do so much on her own. (And since I am coming up with the recipes, photographing them, writing this post, raising children, going to the gym, cleaning, doing laundry, doing other "wife things", taking kids to activities, walking my dogs, having friends, essentially turning my home into a food truck once or twice a week, occasionally showering and brushing my hair; my plate is full.

Since I am boasting about the brevity and simplicity of this recipe (and its prep time), I might as well move on from rambling and get to the cooking part. Because if you're looking for a quick recipe, chances are you didn't come here to read my never ending blah, blah, blahs.

Ingredients/Instructions:

1/2 cup sour cream

1 1/2 cups crumbled feta

1 lemon, zested and juiced

1-2 cloves of raw garlic, or 8-10 roasted garlic cloves (I will get into that below)*

1 tsp olive oil (more for drizzle)

1/2 tsp red pepper flakes (or more if desired)

1/2 tsp thyme (fresh or dried)

1/2 tsp dried oregano

1/2 tsp dill (fresh or dried)

1/2 tsp salt

1/2 tsp black pepper

Serve with pita, naan, toasted bread, carrots, sliced cucumbers, peppers, etc...

Or use as a spread of sandwiches, burgers and more...

*I looove roasted garlic. If there were to ever be a vampire Apocalypse, I would probably survive. If you are looking for a 5 minute dip, then use 1-2 cloves of fresh garlic. This will give you the garlic flavor you are looking for in this dish. If you have some extra time, then adding roasted garlic adds a ton of flavor. Roasting garlic adds a slightly sweet, more mild and caramelized flavor to the garlic. You can find my post on how to roast garlic, here.

1. Add sour cream, garlic, lemon juice and lemon zest, olive oil, salt, pepper and half of the feta to a food processor and puree until smooth.

2. Add the herbs, olive oil, red pepper flakes and the remaining feta and pulse until mostly smooth.

3. That is it! Super duper simple, as promised.

Serve, enjoy and be that person who brought the bomb ass dip!
