Steak Tacos with Creamy Tomatillo Salsa
I love fresh tacos. These are easy. And the marinade that I use for this steak, I use for pretty much any flank steak or Mexican steak dish that I make. (I you scroll way back in the blog, you will see Marinated Flank Steak with Chimmichurri Butter... same marinade.) And this sweet and spicy salsa recipe is awesome. I am copying it from my sister and mother in law (thanks guys) who got it off of Pinterest. (So if I'm accidently jacking your super patented Creamy Tomatillo Salsa recipe... I’m sorry.)
Ingredients/Instructions:
For the Steak and Marinade:
For the Creamy Tomatillo Avocado Salsa:
1 avocado
3 tomatillos (husks removed)
2 jalapenos (seeded and cleaned)
1/2 a white onion
4 cloves of garlic
juice of 1 lime
1 tbsp agave nectar
1/2 cup cilantro
1 tsp salt
Combine the above listed ingredients in a food processor or blender and puree until they are a smooth and consistent texture.
Additional Ingredients:
Tortillas (corn or flour)
Cojita (or you could use shredded cheese... its just not as authentic)
avocadoes (extra, optional)
cilantro (extra, optional)
limes (extra, optional)
Assemble the tacos by laying down the steak, the creamy tomatillo salsa and crumbled cojita. You can also top with the extra avocado, cilantro and lime juice.
