Spinach Artichoke Dip with Roasted Garlic Cloves
I'm not even going to try to sell you on this one. Plus, I'm tired. Plus plus, I've just added like 5 recipes after my holiday slacking. Oh, I've had wine and have to get up early with kids. Yes, I'm flawed. :)
Everyone likes artichoke dip. The End!
Serves, well, a lot. (I made this as a Christmas Day app for 11-14 people. Feel free to halve the recipe -or- it freezes and re bakes quite well)
Ingredients:
2 cans spinach
3 6.5 jars of marinated artichoke hearts
1 1/2 cups roasted garlic (you can find these in some deli cases or can make it yourself)
3 cups shredded mozzarella
2 1/2 cups parmesan
16 oz sour cream
1 tbsp salt
1 tbsp black pepper
Instructions:
1. In a large mixing bowl combine the drained spinach, 2 cups mozzarella, 2 cups parmesan (reserve 1/2 cup for topping), salt, pepper and sour cream. Stir well.
2. On a cutting board drain and empty the artichoke hearts. Also add the roasted garlic cloves and coarsely chop both. Stir into the previous mixture.
3. Transfer into a large baking dish and top with the remaining 1/2 cup of parmesan.
4. Bake at 350 degrees for 25-30 minutes.
Serve with crackers, chips, sliced French bread, etc...
