Blackberry Coconut Oats with Chia and Flax


A while back I made some overnight oats. One of the flavors that I concocted (although hardly and original thought) was blackberry coconut oatmeal. It was yummy. So was this. It is simple enough, and has complex carbohydrates. This means it has real energy that will fill you up and keep you filled and fueled. I have also added other great things like ground flax seeds and chia seeds. Serves 3-4

Ingredients: 1 cup organic mixed oats (I used Bob's Red Mill) 2 cups water 1 cup refrigerated coconut milk, divided 30 or so blackberries 1/4 cup raw organic sugar cane crystals, plus 2 more tsp 2 tsp vanilla 1-2 tbsp chia seeds 1-2 tbsp ground flax seed unsweetened coconut flakes pinch of salt

Instructions: 1. Bring 2 cups of water to a boil and add the oats. Reduce the heat and add a pinch of salt. Cook 10-15 minutes, stirring every 3-5. 2. While the oatmeal is cooking add 20 blackberries (reserving the rest whole) to a food processor and puree along with 2 tsp raw sugar and 2 tsp vanilla. Puree until smooth and set aside. 3. When the oatmeal is almost done cooking, add 1/2 cup of coconut milk and stir until everything is mixed. 4. Add the flax seed, chia seeds and 1/4 cup raw sugar. Stir this mixture until it all ingredients are well blended. 5. Spoon the oatmeal into the desired number of bowls. Drizzle with a little bit more coconut milk and the blackberry puree. 6. Top with whole blackberries and unsweetened coconut flakes. Enjoy!
