Shaved Zucchini Salad with Oven Roasted Tomatoes, Pistachios and Goat Cheese


Yum. Yummers. Yummiful! Yumtastic? This delicious and nutritious salad has it all. The power of raw vegetables, roasted grape tomatoes, tasty dressing, crisp greens and goat cheese. What is food without goat cheese? Its vegetarian. Or even vegan and clean eating friendly if you choose to forgo the goat cheese. Chickpeas and tasty pistachios fill in for your protein element. My ever skeptical husband of course added left over grilled chicken. But I didn't miss it at all. I devoured two huge bowls of this salad. And I was super sad when he came home late from work and ate the prepared tupperware that was intended to be his lunch the next day; and then took the one that was intended to be my lunch to work with him for his lunch. Now I will have to make some sub par mess for lunch today. Oh well, I am sure it will still be tasty; even if it isn't this super yummy salad. Serves 4-5

Ingredients: 5 oz package of baby arugula 10 oz package of grape tomatoes 3 zucchinis 3/4 oz package of basil 3/4- 1 cup shelled pistachios 1 can chickpeas 4 oz container crumbled goat cheese (you probably wont need all of this) salt 1-2 tbsp balsamic vinegar Lemon Basil Salad Dressing (click this hyperlink for ingredients/instructions)

Instructions: (Prepare your Lemon Basil Salad Dressing) 1. Begin by oven roasting your tomatoes. Turn your oven to a broil setting and empty the tomatoes onto a silicone mat or sheet of parchment paper. Lightly sprinkle with salt and carefully drizzle with balsamic vinegar. Broil for 10 minutes, stir/flip and broil for an additional 5-10 minutes. (You only want them to slightly black/split open.) Remove from the oven and allow to cool. 2. While your tomatoes are roasting, go ahead and shave your zucchini. I had tried to do this with my mandolin, but the slices were too thick to create the beautiful, thin slices that I wanted. So, I had to switched to my vegetable peeler which produced the desired results. Shave all 3 zucchinis and set aside. 3. Cut up the basil into small pieces to sprinkle into the salad. 4. Now you're pretty much just assembling... Its so simple. Plate your arugula, and shaved zucchini and toss together to form the bed of the salad. Top with shelled pistachios, roasted grape tomatoes, chickpeas, goat cheese, salad dressing and basil. (Think about the quantities specified in the ingredients and divide them evenly into 4-5 salads when adding your "toppings".) Enjoy!
