Cheesy Green Chili Bean Dip


Okay, it really doesn't get much easier than this! And on top of easy and tasty, were talking practically no dishes. If you want a simple crowd pleasing appetizer for a get together, or a Super Bowl party (Go Seattle Seahawks), then just bring this. People will love you! My husband’s work has first Fridays, where the whole family comes down and does a pot luck together once a month. I made this dip and it was devoured. Because when you put cheese, beans and spices together, then heat them up and make them ooey, gooey and bubbly… you’re certain to have people singing your praises!!! And I even made a super catchy video. So what are you waiting for?!?!

Ingredients:

2 cans refried beans, with green chilis

16 oz cream cheese, softened

2 packets taco powder

2 cans pinto beans

12 oz diced green chilis

10 oz green enchilada sauce8-10 oz shredded pepper jack cheese

Instructions:

  1. Empty the 2 cans of refried beans into a large cast iron skillet, spread the beans out evenly.

  2. Mix 16 oz softened cream cheese and 2 packets of taco powder and spread it evenly on top of the beans.

  3. Empty 2 cans of drained pinto beans into the dish and spread them out. Do the same with the canned green chilis.

  4. Open the green enchilada sauce and drizzle it evenly throughout the dish.

  5. Top with grated pepper jack cheese.

  6. Bake at 350 degrees for 40 minutes.

Serve with Fritos, tortilla chips or whatever else you dream up. El Fin
